Fruity Breakfast


I can't say that our Christmas was very socially demanding.  We had a lovely lunch with friends on Christmas Day and the rest of the time we kept our own company.  Despite this, I found myself eating far more of the "sometimes" foods than good foods.  It may not be New Year yet but it is certainly not too early for a resolution to put a stop to the holiday bad eating habits.  This bowl of sunshine may not be perfect as it is full of fruit, but it was a lovely healthy way to start the first day after a run of public holidays.

The idea was thanks to my mother, who told me how she made herself a crumble-less apple crumble in the microwave.  I loved the idea and I adapted it (not very much) to make my breakfast.

It was very simple, core and dice your favourite apple but leave the peel.  Sprinkle over some cinnamon, drizzle over some agave nectar and vanilla.  Microwave on high for 1-2 minutes (depending on your microwave) until the apple is soft.  Top with some natural yoghurt, drizzle with some golden syrup and some more cinnamon.

It's not too sweet, it could be made a little sweeter by upping the agave nectar but I thought it was just sweet enough for breakfast.  I think it would be wonderful topping for oatmeal or porridge.

  1. I'm loving the new look layout and colour scheme - a change is as good as a holiday, right? I'm also loving the resolutions - I need to join you in that - come the 1st of January 2011, I'm making a conscious effort to be aware of what i'm eating and to stop snacking and indulging all day, every day!
