Grilled chicken with spicy coconut sauce
This was a very tasty, very simple dinner we had in the week before we went away when we were trying to clean out the freezer and pantry. All the recipe needed was some chicken breast fillets, coconut milk, laksa paste and egg noodles. I had spent the weekend before we left cleaning out the pantry, so I had a beautifully clean pantry with an abundance of coconut milk and egg noodles and the last meal of meat in the freezer were chicken breast fillet pieces.
Grilled chicken with spicy coconut sauce

500g chicken breast fillet pieces
2 tbs vegetable oil
sea salt
freshly ground black pepper
310ml (1 1/4 cups) coconut milk
75g (1/4 cup) laksa paste
400g fresh egg noodles

Put the chicken, oil, salt and pepper in a bowl and toss to combine.
Heat a large frying pant over high heat and then cook the chicken until just cooked.
In a small saucepan combine the coconut milk and laksa paste over medium heat until combined. Cook for 5 minutes or until reduced slightly.
While the chicken and sauce are cooking, cook the noodles in boiling, salted water for 1 minute. Drain and divide among 4 shallow serving bowls. Top with chicken pieces, pour the sauce over and serve with lime cheeks.
