Raw Vegan Apple Crumble


I have only recently discovered the lovely Averie's blog, Love Veggies and Yoga and it really resonated with me.  I love Averie's approach to life and how her friendly happy personality really shines through in her posts.  Plus, she cooks (and uncooks!) the most incredible food!!!

My poor Diigo is groaning under the mass addition of all these new bookmarks.  (All the rumours surrounding Yahoo! shutting down / selling off Delicious freaked me out a little about the security of my 6,500-odd bookmarks - while I do backup, the csv file is a nightmare to organise - so I've jumped ship.)

Today I've made Averie's Raw Vegan Kale Chips (although I used the oven, so mine weren't raw) and her Raw Vegan Apple Crumble.  This weekend I also plan to make her Raw Vegan Chocolate Chip Cookies, Vegan "Thin Mint" Fudge and Raw Vegan Breakfast Cookie. Oh, and of course her wonderful Raw Vegan Chocolate Brownie.  So far.  And I'm only up to posts from late 2009!!!

 
So, not to get too far ahead of myself, I made the raw vegan apple crumble.  I don't have a Vitamix so I broke out my trusty Sunbeam StickMaster Plus.  I very rarely use it as a stick blender, but I use the chopping attachment all the time since my large food processor doesn't do small volumes very well.  I chopped up the oats, almond meal and dates but the mixture still seemed quite dry and powdery.  My dates were quite small, so I added two more and was much happier with the consistency.



After that I chopped up a couple of smaller sized apples and mixed them with some brown sugar, agave, vanilla and cinnamon. I ran out of brown sugar so I used perhaps three tablespoons worth and I skimped on the agave as I was starting to run out. I added it until the mix tasted good, maybe two and a half tablespoons. Then I had to forcibly restrain myself from eating all the apple right then and there. I consoled myself by scraping the remnants of the brown sugar/agave/vanilla/cinnamon mix from the bowl.


Finally, you blend some more oats, almond meal, brown sugar (or dark brown sugar in my case) and agave for the topping. The crumble topping tastes like some incredible kind of cookie dough. I layered it all up and I was all ready to put it in the fridge after the obligatory photo taking, but I couldn't resist having a bite.

It was awesome. It tasted amazing. It was without a doubt the best apple crumble I've ever tasted and it put all of those baked and cooked confections to shame. It may be the sweetness because it is quite sweet, but who cares? It's a revelation!!! A revelation of fruit crumbles. Thank you Averie!
